Ingredients

250ml Rice

160g Oja Dry Roasted Soya Beans

Oil for frying

Salt

2 Potatoes, diced

15ml Turmeric

1 Onion

5ml Whole Cumin

6 Black pepper corns

1cm fresh Ginger

2.5ml Coriander

2 Cloves of garlic

6 Curry leaves

2 Carrots, cleaned and grated

15ml Mustard seeds

30ml Red mild chilli powder

3 All Spice seeds

1.2 liter Stock of  your choice

1 Tin tomatoes

2 Star anis

2 -3 Casia sticks

1 Tin tomato pure

Handful of Dhania

Directions

  1. Soak the Oja dry roasted soya beans in 650ml boiling water for 20 minutes.
  2. Strain and place Oja Dry Roasted soya beans in Pressure cooker.  Add 1.2L Stock and cook for 20 minutes.  Drain the beans, keeping the water aside.
  3. Boil the rice, salt and turmeric together.  Rinse and put aside.
  4. Fry onions over medium heat.  Add the mustard seeds, garlic and ginger.
  5. Grind spices together and add to the onions.  Be careful not to burn your spices.  Add your curry leaves, tomatoes and tomato puree.
  6. If you want to serve your Briyani with dhal, you can dish out  about a ¼ of this mixture.
  7. Add your carrots and give it a good stir.
  8. Once the acidity of the tomatoes are cooked out, stir your beans into the curry.
  9. Add your rice.
  10. Top with deep fried potatoes and dhania.

 

DHAL

 

  1. Prepared your Oja Dry Roasted Soya beans as above.
  2. Fry 1 chopped onion, garlic and some curry leaves together.
  3. Add the mixture that was kept aside to your onions and give it a good stir.
  4. Add your beans.
  5. Put mixture into a blender and blend.
  6. Add salt and pepper to taste.
  7. Serve as a dhal with the Briyani.
